Baby Marrow Salad

I always like to serve something familiar, but a little out of the ordinary when we have people around for a meal. Last week, we invited people who really enjoy their salads. This simple baby marrow salad was a huge hit!
Ingredients

6 to 8 baby marrows
Balsamic vinegar
Avocado or olive oil
Chilli flakes
Bunch of fresh coriander
Parmesan cheese
Method
- Slice the baby marrows into paper thin slices.
- Arrange the baby marrow slices in concentric circles on a flat plate.
- Sprinkle with balsamic vinegar and avocado oil.
- If you enjoy a bit of a bite, sprinkle chilli flakes to your taste.
- Break up the coriander and sprinkle it over the top of the baby marrow.
- Use a vegetable peeler to shave parmesan cheese over the top
Enjoy as a side salad or a starter.
